Hello my glutenfree buddies!!

       
     I hope you know what's gluten free and what is gluten intolerance.If you don't know what is gluten and what's gluten free food you can read about in https://wheatfreecooking2020.blogspot.com/ .

    Just to give you an overview Gluten gluten is the one name given to the protein found in various grains.it allows grains to hold their shapes.It work like a glue.

    And many of the food we eat contains gluten in them.if you are celiac or gluten allergic you must start gluten free diet.

    For many foods like chapatti ,parathas ,pan cakes ,cakes ,bread ,cookie ,buns we need flours (maida) to make them.but as a gluten allergic you have to find an alternative to it.

    There are many flour blends are in markets readily available but that are all very costly.you can not afford them all time.

    But instead of buying them you can make them home with not much cost.and also you can make your own taste of blends.you can choice any flour of your choice and can use it to make different traditional recipes gluten free.


        Here one thing I want to say that all normal recipes has all purpose flour or whole wheat flour or and gluten flour can be replace with this blends but there will not be 1:1 ratio all time.you need to try and test every time for correct ratio of flour blends.many gluten free articles mentions that what amount of ratios you need.

    So take care that for the perfect recipes you need perfect measure of ingredients.

    here I am giving you Best Gluten Free Four mix that I have tried and tested for myself in many recipes used instead of all purpose flour(maida).


                


Blend one 1 :

1 cup White rice flour.
1/2 cup tapioca flour or potato flour
1/4 cup Corn flour
1/4 cup Millet flour


Blend two 2 :

1 cup White or brown rice flour.
1/2 cup sabudana flour or arrow root powder
1/4 cup Corn flour
1/4 cup Sorghum flour



    Here you can use Rajgira(Amaranth) flour instead of Millet or sorghum flour.
    you can use Besan(Chick pea flour) instead of rice flours.but you need to take half of the ratio.like take 1/2 chick pea flour and 1/2 rice flour .

    This all flour blends mostly works well with my baking recipes.



    To bake any gluten free recipes you need something that can bind flours with each other like a glue.

    Here we can use xanthum gum or chia seeds to bind flours together

    Xanthum Gum :

    Xanthum gum is a additive made from sugar and fermented by a bacteria.its a soluble fiber.it stabilise foods.

    But xanthum gum is very much hard on our digestive systems so you can not use it regularly with your food.There are many other options you can use like guar gum ,Psyllium husk,Chia seeds and water ,corn starch ,unflavoured gelatine ,egg whites.
   

    Chia seeds :

    The seeds are small and black seeds from the plant Salvia hispanica also known as takmaria in Hindi.Chia seeds are rich source of protein ,omega 3 and fibre .Its very much useful for wight loss.

    Put 1 tablespoon of Chia seeds in a cup and add 3 tablespoon of water.Allow the mixture to set for 10 minutes.
    You can replace eggs with Chia seeds and water mixture.

   
    Some flours are there which are gluten free alternatives for wheat flour or all purpose flour.

1.Millet Flour :




    Millet flours are made from small round green coloured grains called millets.you can use it as a whole grain or as a flour in many recipes.

  • It is a great source of fibre ,vitamins and minerals.
  • It helps for weight control.
  • It is very much helpful for diabetic people


2.Sorghum flour :




    Sorghum flour also called Jowar ka atta in many states of India.It is also like millet but looks white in colour.It is also helpful for weight control.


3.Brown or White Rice flour :






    Brown or white rice flours are best alternative to make gluten free recipes.you can make rice flour at home also.
   
     we need to be careful while selecting rice flour because all of them are not gluten free at all.Because may be they made in the factory or area where other gf products also made.so contamination may take place. 


4.Buckwheat flour :



    Buckwheat is neither a grain nor related to wheat, buckwheat is gluten-free and safe for those with celiac disease and gluten sensitivities. Studies show that even in high concentrations, buckwheat flour and its purified proteins have no immunologic reactions for patients with celiac disease.

    Buckwheat flour is also called kuttu ka atta.


5.Chickpea Flour (also known as gram or garbanzo flour or Besan) :

        




    Chickpea flour is a flour that generally is made from Gram lentils or chana dal.It is reach in protein and fibre.and also has a great taste to make some dishes.


6.Corn Flour :

    







        Corn flour is a crushed and sieved powder form of a dried corn.It is also rich in protein and fibre.I use it for many Gluten free Dessert recipes

   
7.Oat Flour :

    

    All oats are not gluten free but some of them can be used as gluten free food.In market many of oat sellers sell their product but only few of them are pure oats like they are processing them in gluten free environments.so it will be great to find them and use only them.


8.Potato Flour vs potato starch :

    


    Potato flour is made from whole peeled potatoes, cooked, dried, and ground into a fine, beige-coloured powder. Potato starch is “washed” out of crushed potatoes, then dried to a fine, bright-white powder. ... Potato flour includes fibre, protein, and flavour, while potato starch is pure flavourless starch.


 

9.Quinoa Flour :




                Quinoa Flour is is the most nutritious grain flour available. It is naturally Gluten-free with high fibre and protein content as compared to any Whole Grain It is a good source of iron, potassium, manganese and phosphorus.It is naturally gluten-free and a great source of dietary fibre.


10.Tapioca Flour(Simla Alu)/starch :





        Tapioca is a starch extracted from the storage roots of the cassava plant.It use is now spread throughout South America. The plant was brought by the Portuguese to much of West Indies, Africa and Asia.

Gluten Free Foods

  1.Gluten free Dhokla Ingredients 3 cups of rice 1 and 1/2 cup of chana dal 2 tsp fenugreek seed 1/2 cup dahi(sour yogurt) 4-5 green chillies 7-8 garlic cloves coriander leaves 1/2 tsp turmeric powder salt to taste oil for greasing 2 tsp baking soda Process Take a bowl and mix rice and dal. wash it twice or thrice soak them for 2 hours whenever you want to make this recipe you need to start preparing one night before. now drained out all water and a make a coarse paste by adding it to yogurt ,garlic and green chillies. now keep aside this mixture for one night or 6 to 7 hours. after that we can see fermentation is there.  now add salt to taste. add turmeric powder ,fenugreek seeds and chopped coriander leaves mix it well. now take out some mixture in small bowl and add a 1/2 tsp of baking soda to it and mix it well. meanwhile keep ready your boiler. take a steel or aluminium plate and grease with oil.pour that mixture into plate and put it to boiler. flame must be mediu...
