1.Gluten free Dhokla



Ingredients

  • 3 cups of rice
  • 1 and 1/2 cup of chana dal
  • 2 tsp fenugreek seed
  • 1/2 cup dahi(sour yogurt)
  • 4-5 green chillies
  • 7-8 garlic cloves
  • coriander leaves
  • 1/2 tsp turmeric powder
  • salt to taste
  • oil for greasing
  • 2 tsp baking soda
Process
  • Take a bowl and mix rice and dal.
  • wash it twice or thrice
  • soak them for 2 hours
  • whenever you want to make this recipe you need to start preparing one night before.
  • now drained out all water and a make a coarse paste by adding it to yogurt ,garlic and green chillies.
  • now keep aside this mixture for one night or 6 to 7 hours.
  • after that we can see fermentation is there. 
  • now add salt to taste.
  • add turmeric powder ,fenugreek seeds and chopped coriander leaves
  • mix it well.
  • now take out some mixture in small bowl and add a 1/2 tsp of baking soda to it and mix it well.
  • meanwhile keep ready your boiler.
  • take a steel or aluminium plate and grease with oil.pour that mixture into plate and put it to boiler.
  • flame must be medium to low.
  • after 10-15 minutes take out the plate and let it cool for a while.make small pieces and serve hot with groundnut oil and garlic chutney.

2.Gluten free Khandavi




Ingredients

  • 1 cup gram flour(besan)(gluten free)
  • 3 cup water
  • salt to taste
  • 1/2 tsp ginger paste
  • 1/2 tsp green chilly paste
  • 1/2 cup sour yogurt
  • 1 tsp oil
  • 6-7 curry leaves
  • 1/2 tsp mustard seeds
  • pinch of hing(asafoetida)
  • 1/2 tsp sesame seeds
  • 1 tsp red chilly powder
  • coriander leaves for garnish
Process
  • Take a pan and mix besan and water.
  • make a lump free mixture
  • add salt ,ginger paste ,green chilly paste ,yogurt
  • mix well
  • put on gas and heat it on slow to medium gas
  • stir continuously so mixture become thick and not form any lumps
  • now take a big plate or you can use your kitchen desk  
  • now as this mixture become like thick paste switch off the flame
  • now grease the plate with oil.
  • put mixture on plate and spread it with a flat spatula .make very thin layer
  • let it cool for sometimes. cut strips from it and roll it as shown in above picture.
  • put them in a plate
  • take a pan and heat oil add curry leaves ,sesame seeds ,mustard seeds
  • pour this mixture on the rolls we made
  • now sprinkle some chilly powder on it.garnish with coriander leaves and serve hot.

3.Gluten free Dhosa




Ingredients

  • For Dhosa batter
  • 1 cup urad dal
  • 3 cup rice(boiled rice is better)
  • salt to taste
  • sour yogurt

  • For sambhar(dal)
  • 1 cup tuver dal(arhar dal)
  • water to boil
  • 1 tomato
  • 1/2 onion
  • 2 green chillies
  • 1/2 brinjal
  • 1/2 bottle ground
  • 2 drum sticks
  • 2 tsp red chilly powder
  • 1 tsp turmeric powder
  • 2 tsp dhosa garam masala
  • salt to taste
  • 1/2 tsp sugar
  • 1/2 lemons juice
  • 6-7 curry leaves
  • 1/2 tsp mustard seeds
  • pinch of hing(asafoetida)

  • For coconut chutney
  • fresh coconut peaces
  • 1/2 inch ginger
  • 3-4 curry leaves
  • 1 green chilly
  • 1/2 cup yogurt
  • salt
  • 1 tsp urad dal(soaked for 1 hour)
  • 1 tsp chana dal(soaked for 1 hour)
  • 1/2 tsp oil
  • 1/2 tsp mustard seeds
  • pinch of hing(asafoetida) 

Process
  • one night before you need to soaked urad dal and rice.
  • first wash them twice or trice .then soak overnight or soak for 6-7 hours.
  • In the morning drain all extra water.add yogurt and  grind them to course paste
  • if needed pour some water.
  • now keep this mixture to fermant for 5-6 hours.
  • now for the sambhar take tuver dal wash it nicely.add water to boil dal.
  • put it in pressor cooker and make 4-5 whistles
  • now churn the blender in boiled dal and make a smooth paste
  • now take drum sticks chopped them to small peace and pressor cook it for two whistles
  • now take a pan.put oil to heat.add hing, curry leaves ,onions ,tomato brinjal ,bottle guard 
  • now let them cook a while
  • now add chilly powder ,turmeric powder ,garam masala ,salt.mix well
  • now add boiled dal and drum sticks peaces.mix it.let it boil on slow to medium gas.
  • after sometimes add sugar and lemon juice. and switch off the flame
  • for the chutney mix coconut ,ginger ,chilly ,salt ,urad dal ,chana dal in a mixture jar
  • make a course paste.
  • now take a pan and add oil to heat.add curry leaves ,mustard seeds ,hing and pour this mixture to course paste.mix well.your chutney is ready
  • now take dhosa batter add salt if you didnt add it.
  • take dhosa tawa or pan.heat it.grease with oil and make dhosa from the batter one by one.
  • serve hot with sambhar and chutney.
