What is Gluten?

    Gluten is protein that we found in wheat ,rye or barley which maintains the elasticity of food.and it work as a glue to make food chewy.
    Wheat mainly contains Gluten protein in it and rye has hordein protein and barley has secalin protein in it.

Gluten is made up of two elements
1.Gliadin
2.Glutenin

    

Why Me?

    Many people wondering why am I get this disease and from where?
1.Genetical reason :
If your family member anytime like in past or at present is a celiac or gluten intolerance patient then there is 10% more chances of yours to be Celiac patient.

2.When you eat anything your body will treat that food with    gluten as a enemy and start a war against the gluten in        food.This allergy can occur at any age.
        May be your parents or any family member doesn't have gluten problems but you still can diagnosed with Celiac or Gluten intolerance .Yes Its possible.because your body is taking Gluten as a Invader and is fighting it continuously.

    Now there are two phase we can say that either you are Celiac or Not Celiac.But in both conditions you have to be on Gluten Free Diet.So if both has the same treatment why this two name given to them.I tell you why?

Celiac Disease :

When we eat food with Gluten our body Auto immune system reacts to it as a enemy and fight against it.like we have many army ,naval and air forces for our country, our body also have inbuilt army to fight against invaders. 
  When Gluten enters into small intestine there are many vertical linings on the edge of small intestine that is called Villies are starting to be damaged .Villies helps small intestine to absorb the food nutrient like protein,Zinc,Iron etc ..and at one point of time this Villies became flat so now this Villies stop absorbing food nutrient and that is why a person can have Mal-Nutrition ,many gut related problems like Bloating ,Diarrhoea and also anaemia.

    Before starting Gluten Free Diet one should make sure of his symptoms and must diagnose the problems accordingly.

IgA TTG Test
    It is done when celiac symptoms are visible and one want to be confirm it.Its a blood test.That will show TTG(Tissue Transglutaminase) level in our blood.when there is gluten intake our body mistakenly thinks that Gluten is a foreign invader and that is why our immune system makes antibodies that attack on enzyme in the intestine called Tissue Transglutaminase.

    To carry out this test correctly  one should be on Gluten diet at-least for 10 to 12 days.

    Once this test is done and is positive then doctors ask to do Biopsy(Endoscopy) of your intestine.and they take a small portion of your intestine skin which has Villies to see the internal damage.Once your biopsy report shows your villies condition is not good that means you need to start Gluten Free Diet from that day only.

Fact : Do you know on every 100 person there is 1 case of celiac in many countries.



Treatment For Celiac

    Unfortunately there is no other medicine yet discovered that can recover Celiac but researchers are trying to find the ways to fight celiac and their research are going on.
But with proper 100% Gluten Free Diet we can be out of symptoms of celiac and can be healthy.

Non-Celiac Gluten Sensitivity,Gluten Intolerence,Gluten Allergy

    This is the second case where a person has many symptoms of celiac but when diagnose with TTG test it came out negative.that means patient is not Gluten allergic.
But when he start to follow GF diet he feels very much beneficial.He started to recover.So why is the case?Because this type of people doesn't have celiac but they have gluten allergy.it means that person might be allergic to any more element present in Gluten food.Like there is one sugar called FODMAPS.many people may have this FODMAPs allergy and they get recover when tried GF diet.


What is FODMAP?

    FODMAP stands for fermentable oligosaccharides, disaccharides, monosaccharides and polyols, which are short-chain carbohydrates (sugars) that the small intestine absorbs poorly. Some people experience digestive distress after eating them.

    If you want to be healthy you should follow Gluten Free Diet.that is the only treatment we have right now.
    Once you start to following Gluten free diet you will see your body will recover and your intestine also gets better.So to be completely out of Gluten problems one should

  1. Check food products labels that we buy from market
  1. Not Contaminate your food with other Gluten rich products
Sometimes many food items label that "Gluten free” but according to Food and Drug Administration manufactures must not label a food item as Gluten Free unless it Contains less than 20 parts per million of Gluten-The lowest level that test can reliably detect.
    There is a trend going now a days "Be Gluten Free” but the food that contains Gluten is also a source of other vitamins and minerals like iron,zinc,fibre,calcium etc..So first consult with your doctors first then start following GF diet.the one who is on GF diet should also take extra supplements for all this vitamins and minerals as instructed by your doctors.

Gluten Free Foods

  1.Gluten free Dhokla Ingredients 3 cups of rice 1 and 1/2 cup of chana dal 2 tsp fenugreek seed 1/2 cup dahi(sour yogurt) 4-5 green chillies 7-8 garlic cloves coriander leaves 1/2 tsp turmeric powder salt to taste oil for greasing 2 tsp baking soda Process Take a bowl and mix rice and dal. wash it twice or thrice soak them for 2 hours whenever you want to make this recipe you need to start preparing one night before. now drained out all water and a make a coarse paste by adding it to yogurt ,garlic and green chillies. now keep aside this mixture for one night or 6 to 7 hours. after that we can see fermentation is there.  now add salt to taste. add turmeric powder ,fenugreek seeds and chopped coriander leaves mix it well. now take out some mixture in small bowl and add a 1/2 tsp of baking soda to it and mix it well. meanwhile keep ready your boiler. take a steel or aluminium plate and grease with oil.pour that mixture into plate and put it to boiler. flame must be mediu...
