                    Hey myglutenfree buddies!!Hope you all are fine.Today I am going to share with you Gluten Free Aloo Paratha recipe that is farhali also.Means we can eat this parathas in Upvas or Vrat.

Do you know Who firstly mentioned Paratha?

        The first one who references to paratha was mentioned by nijjar in his one of his Book.Parathas are associated with North Indian Communities Cooking.

    Mainly Punjabi in India are best known for making of Parathas.They make them two ways 1.Plain Parathas 2.Stuffed Parathas

    Parathas we can eat as Breakfast or as a whole meal dish with some more items with it.You can place different stuffed parathas as tiffin snack.

    For stuffed parathas there are so many varieties which we can be used as a stuffing.Like Potato(Aloo) ,Carrot ,Spinach ,Cauli flower,Paneer and many more.And for the outer layer traditionally we use whole wheat flour.

    Here we need substitute of Whole Wheat flour and we have many GF flours that can we use and also with many mire stuffings also.Visit Gluten Free Flour Alternative.


    Parathas can be eaten alone with butter or you can enjoy them with yogurt ,chutney ,pickles and sometimes with tea also.

    Traditionally we make parathas with oil or ghee but some people use baking as a method for paratha as a healthy version.Because Aloo paratha with oil or ghee is not for those who are more health concisious.it can cause weight and fat gain. 

    But My version of gluten free aloo parathas are not unhealthy.and you can use any GF flour as a outer layer.You can use Bajara and Jowar Flour as a substitute for outer layer.

Lets make some preparations before making parathas.

  • Take 3 Potatoes and let them boil completely.
  • Now make Ginger-Chilli Paste
  • Take GF Flour and make a Dough
Now lets start with main Recipe

Gluten Free Aloo Parathas

Ingredient

For the Stuffing :

2-3 tsp Oil
3 Potatoes
2-3 Green Chillies
1/2 inch Ginger 
5-6 Curry leaves
1/2 tsp Mustard seeds
1/2 tsp Sesame seeds
1 tsp Garam Masala
1/4 tsp Turmeric Powder
1/2 tsp Coriander Powder
1/2 tsp Cumin Powder
Few Coriander Leaves
Pinch of Asafoetida
Salt to tase

For Outer Layer :

2 Cup Rajgira(Amaranth) Flour or Gluten Free Flour
1 cup Sabudana(Sago) Flour
Salt to taste

Process 

  • Boil Potatoes.


  • Make Chilli-Ginger Paste.I Like Chopped chillies then paste one.Chopped Coriander Leaves and Curry Leaves


  • Take a big bowl and mix Rajgira Flour and Sabudana Flour properly.
  • Add salt to your taste.If you take my advise put some low Salt Because it taste good then more salt.
  • Add a little water and mix it gently and make a soft not so hard dough.

  • Now take a pan and put 2-3 tsp of oil.Let it heat.
  • Add mustard seeds ,Sesame seeds ,asafoetida, Ginger Garlic Paste,Coriander leaves,Curry leaves and mix them at low gas.
  • Saute chillies and ginger for sometimes.
  • Now add turmeric powder ,coriander powder ,cumin powder,Garam masala powder.
  • Mix properly
  • Add Boiled and Smashed Potatoes to it.
  • Add salt to taste.
  • Now mix them well.


    If you want you can add sugar and lemon juice to this mixture but usually I don't add it.

  • To make paratha outer layer take small peace of dough and roll it a little.
  • Now put some potato mixture in center of that chapatti.
  • And take all side up and cover mixture like no mixture is visible.
  • Other method I use is make two chapatti and spread potto mixture over one chapatti and cover with other chapatti.and press at the border properly so paratha is sealed from all sides in round.
  • Now take it carefully put it to a nonstick tawa and let it cook from both sides.Apply butter or oil whatever you want to on both the sides
  • Your Gluten Free Aloo Paratha is ready to eat.
  • You can eat with yogurt ,pickles or any curry you want.

 





    If you want you can replace this rajgira flour with bajra or jowar flour.that also are nice in taste.
